Papaya Pickle (Pappaya Achar)
Papaya pickle is a unique and delicious homemade achar made from raw (unripe) papaya, known for its slightly firm texture and mild flavor that beautifully absorbs spices. In Kerala style, the papaya is peeled, cut into small cubes, and lightly cooked or sun-dried before mixing with a rich blend of spices.
The pickle is prepared using ingredients like chili powder, turmeric, mustard seeds, fenugreek, garlic, ginger, curry leaves, vinegar, and oil. Once combined, the papaya pieces soak up the spicy and tangy masala, resulting in a bold, flavorful pickle with a soft yet slightly crunchy bite.
