Nellikka Varatti Pickle is a traditional Kerala delicacy made from Indian gooseberries (nellikka). The word “varatti” means cooked down or reduced, which gives this pickle its unique thick, semi-dry texture and intense flavor.
It is prepared by cooking gooseberries in oil along with spices like mustard seeds, curry leaves, red chilli powder, turmeric, fenugreek, and asafoetida. The mixture is slowly cooked until the gooseberries soften, shrink slightly, and absorb all the masala. Unlike regular pickles, this one is less watery and more concentrated.
