Rubbica Uppilittathu (often referring to rambutan pickle) is a traditional Kerala-style preserved dish made using ripe Rambutan fruits. It is a unique variation of fruit pickles, combining sweetness, saltiness, and mild spice.
To prepare it, fresh rambutans are peeled and the seeds are removed. The soft white flesh is then mixed with salt, sometimes along with spices like chili powder, mustard seeds, and a touch of vinegar or brine for preservation. The mixture is stored in airtight containers and allowed to marinate.
