Jackfruit Varattiya, also known as Chakka Varatti, is a traditional sweet delicacy from Kerala made using ripe jackfruit. It is thick, rich, and intensely flavorful, often prepared during the jackfruit season and stored for long-term use.
This dish is made by cooking finely chopped or mashed ripe jackfruit pulp with jaggery over a low flame. The mixture is continuously stirred until it thickens into a dark brown, glossy paste. A generous amount of coconut oil is added during the process, giving it a smooth texture and enhancing its authentic taste.
The flavor of jackfruit varattiya is naturally sweet with a deep caramel-like richness from the jaggery. It has a soft, slightly chewy consistency and a strong fruity aroma that makes it irresistible. Cardamom is sometimes added to elevate the fragrance and taste.
Jackfruit varattiya is not just a dessert—it is also used as a base ingredient for many traditional Kerala sweets like chakka pradhaman (payasam) and fillings for snacks. Its long shelf life makes it a favorite homemade preserve.
