Ravoothar Biriyani is a traditional and aromatic biriyani originating from the Malabar region of Kerala. It is prepared using fragrant jeerakasala (kaima) rice, tender meat (usually beef or chicken), and a rich blend of whole spices. The meat is slow-cooked with onions, ginger, garlic, green chillies, tomatoes, and traditional Malabar spices, giving it a deep, intense flavor.
Unlike regular biriyani, Ravoothar Biriyani is known for its dark, richly spiced masala and strong aroma. The rice and meat are layered and gently dum-cooked, allowing the flavors to blend perfectly. Fried onions, ghee, curry leaves, and sometimes cashews and raisins are used for garnishing, enhancing both taste and aroma.
