A classic Kerala dry chutney powder made with coconut and spices—aromatic, slightly spicy, and perfect for everyday meals.
1. Roast coconut
Dry roast grated coconut until golden brown and aromatic.
2. Roast other ingredients
Add shallots, red chillies, curry leaves (and garlic if using). Roast well.
3. Add tamarind & salt
Mix everything together and allow to cool.
4. Grind
Grind into a coarse powder (not too fine).
5. Cool & store
Store in an airtight container after cooling.
