Chicken fry masala podi is a spicy, aromatic powder used to coat and marinate chicken before frying. It gives that crispy, flavorful, Kerala-style chicken fry taste.
🌶️ Ingredients
- Kashmiri red chili powder (for color & mild spice)
- Hot chili powder (for extra heat)
- Turmeric powder
- Black pepper powder
- Coriander powder
- Fennel powder
- Garam masala
- Ginger powder (optional)
- Garlic powder (optional)
- Salt
🍳 How to Prepare
- If using whole spices, lightly dry roast (optional for deeper flavor).
- Grind into a fine powder (if needed).
- Mix all powders well.
- Store in an airtight container.
🍗 How to Use (Marination)
- Take cleaned chicken pieces
- Add 1–2 tbsp masala podi
- Add ginger-garlic paste
- Add lemon juice or vinegar
- Add a little water or curd
- Marinate for at least 30 minutes (longer = better taste)

- Shallow fry or deep fry in coconut oil
