🟢 Amla Pickle (Indian Gooseberry Pickle / Nellikka Achar)
Amla pickle is tangy, slightly bitter, and packed with health benefits. It goes great with rice, kanji, or curd rice.
🧂 Ingredients
- Amla (gooseberry) – 500 g
- Salt – 2–3 tbsp
- Turmeric powder – 1 tsp
- Kashmiri chili powder – 2 tbsp
- Mustard seeds – 1 tsp
- Fenugreek seeds (uluva) – ½ tsp
- Asafoetida (hing/kayam) – ½ tsp
- Ginger – 1 tbsp (chopped)
- Garlic – 1 tbsp (chopped)
- Green chilies – 3–4 (optional)
- Sesame oil (gingelly oil) – ½ cup
- Vinegar – 1–2 tbsp (optional)
