🍋 Lemon Pickle (Indian Style / Naranga Achar)
A tangy, spicy, slightly bitter-sweet pickle that goes perfectly with rice, kanji, or curd rice.
🧂 Ingredients
- Lemon – 10–12 (medium, fresh)
- Salt – 3–4 tbsp
- Turmeric powder – 1 tsp
- Kashmiri chili powder – 2–3 tbsp
- Fenugreek seeds (uluva) – 1 tsp
- Mustard seeds – 1 tsp
- Asafoetida (hing/kayam) – ½ tsp
- Ginger – 2 tbsp (finely chopped)
- Garlic – 2 tbsp (chopped)
- Green chilies – 4–5 (optional)
- Sesame oil / Gingelly oil – ½ cup
- Vinegar – 2 tbsp (optional, for longer shelf life)
