A delicious Kerala-style pickle that blends tangy lemon with the natural sweetness of dates—giving a perfect balance of sweet, sour, and spicy flavors.
1. Prepare lemon
Wash, wipe dry, cut into pieces, and steam or boil lightly till soft.
2. Heat oil
Add mustard seeds → let it splutter, then add fenugreek seeds.
3. Add aromatics
Add ginger, garlic, and curry leaves. Sauté well.
4. Add spice powders
Lower flame, add chilli powder and turmeric. Mix carefully.
5. Add lemon & dates
Add cooked lemon pieces and chopped dates. Mix well.
6. Balance taste
Add salt, a little jaggery (optional), and vinegar if needed.
7. Cool & store
Let it cool completely and store in an airtight glass jar.
