Lemon and dates pickle is a delicious sweet-and-tangy Indian pickle that blends the sharp sourness of lemon with the natural sweetness of dates. This unique combination is especially popular in South Indian and Kerala cuisine.
Fresh lemons are cleaned, chopped, and lightly cooked or sun-cured. Soft, deseeded dates are finely chopped and cooked together with the lemons. The mixture is flavored with chilli powder, ginger, garlic, mustard seeds, fenugreek, turmeric, salt, and vinegar, and prepared in gingelly (sesame) oil. As the pickle matures, the flavors deepen and become well balanced.
